Crispy Chicken Alfredo

1: Cut the chicken breast in half and pound until thinner.

2: In three bowls, add a whisked egg to one, 1/3 cup of flour to another, and 2/3 cup breadcrumbs, 1/4 cup parmesan, and chopped parsley to the third bowl.

3: Dip chicken in the egg, then flour, back in the egg, and then into the breadcrumb mixture.

4: Fry the chicken in neutral oil on medium heat until each side is crispy, about 4 minutes on each side.

5: For the pasta, set a pan on medium heat and add in 4 tablespoons of butter and 5 cloves of chopped garlic, stirring until fragrant.

6: Pour in 200 ml of heavy cream and stir until it thickens.

7: Add in italian seasonings, salt, and pepper.

8: Stir in 1 cup of mascarpone until creamy.

9: Add 2/3 cup parmesan and continue stirring on medium-low heat.

10: Add in pasta water if needed to thin and cooked pasta.

11: Top the pasta with the fried chicken and parsley and enjoy.
