These are delicious gluten-free, dairy-free, and vegan Nutter Butter cookies made with oats, coconut sugar, and a creamy peanut butter filling. Perfect for a classic treat without compromising on dietary preferences.
Add all of the dry ingredients to a blender and blend until a powder consistency forms. Alternatively, use 1 cup of flour instead of oats.
Transfer to a bowl and add in all the other ingredients, then mix until a ball forms.
Grab about a teaspoon of dough and form it into a ball, then transfer to a baking sheet. Repeat until all dough is formed into cookie balls.
Use a fork to smash each ball of dough down to create a crisscross pattern.
Bake at 350°F for 12 minutes, then let cool for 5 minutes.
Create the filling and add about 1/2 teaspoon to the bottom side of one cookie, then top it with another cookie. Repeat for all cookies.
