This hidden veggie Texas chili incorporates finely chopped carrots, celery, and leeks, combined with ground beef and robust spices for a flavorful meal. After sautéing and simmering, enjoy this hearty dish with your favorite toppings.
Chop up 4 medium-sized carrots, 2 stalks of celery, and 1 leek.
Add the veggies to a food processor and pulse until they're chopped super small.
To a large pot on medium-low heat, add 1/4 cup olive oil, then add in 1 diced onion and the chopped veggies.
Sauté for about 5-7 minutes or until the onions and veggies have softened.
Add in 2 lbs of ground beef and continue cooking for about 7-10 minutes until the beef is cooked.
Add in 1 tablespoon garlic powder, 3 tablespoons cumin, 3 tablespoons chili powder, 1 tablespoon oregano, 1.5 teaspoons salt, 1 teaspoon smoked paprika, and 1 teaspoon coriander. Mix until all the beef and veggies are covered in seasonings.
Add in 2 cups of beef broth and a 28 oz can of crushed tomatoes (blending the tomatoes if you prefer no chunks).
Bring the mixture to a simmer, then reduce the heat to medium-low, cover with a lid, and cook for 40 minutes.
Let cool, top with whatever you want, and enjoy!
